EC Week: Monday Supper

I had no plans for supper tonight.  It was one of those "open the fridge door and stare inside until I found something" kind of nights.  I decided to use some almond meal that I bought at Trader Joe's a few months ago and try a recipe from my Clean Eating cookbook.  I didn't have all the recommended ingredients so I just improvised.

This is chicken coated with almond meal (it looks like flour only it's finely crushed almonds) that was mixed with one tbsp of whole wheat flour and some paprika, salt and pepper.  I then "fried" it in a little olive oil.

I knew the girls may not like it so I made some whole wheat noodles to go with it (they never turn down pasta) and I had a sweet potato with mine.  I also had a little honey on the side for my chicken.  The chicken was good but tasted really dry and the honey helped.  I put cinnamon and greek honey yogurt on my sweet potato.  And I had a glass of unsweetened black ice tea.  


I was so full (probably from that big smoothie I had earlier) that I didn't even touch my sweet potato.  The chicken and noodles filled me up.  Layla did however sneak up to the table after supper and helped herself to a few bites of sweet potato!

After supper I went to the gym and hopped on the spin bike for 45 minutes and came home and ate an apple with a little dark chocolate almond butter--yes, it's clean!  I drank a ton of water today.  I also didn't eat nearly enough veggies which is a consistant problem for me.  I can eat fruit all day long but eating vegetables is more difficult for me.

Confession of the day:  I may or may not have let my oldest child eat processed mac and cheese for lunch.  I also may or may not have let my middle child eat processed pizza snacks.  And I may or may not have eaten two of said pizza snacks.

Hope you're enjoying reading about my clean eating week.  Nothing like sharing photos of all your meals with the world to keep you accountable!  But don't even think that I'm going to start sharing my weight with y'all cause that just ain't gonna happen!
