EatClean Week: Monday Breakfast



First up this morning:  oatmeal.  I've never been a big oatmeal fan but because of all the health benefits I try to like it.  It is a big deal in the Clean Eating lifestyle.  However, you must buy the plain old oatmeal in the big round cardboard box.  Pre-processed oatmeal is full of all kinds of preservatives so it's a no-no.  This was how I prepared my oatmeal this morning (thanks for the idea, Joanna!).


Vanilla Banana Oatmeal 
Ingredients:
--1 cup vanilla almond milk
--1/2 cup plain oatmeal
--a sprinkle of cinnamon
-- a sprinkle of unsalted, raw slivered almonds
--1 medium banana

1.  Bring almond milk to a boil on the stovetop.  Add oatmeal and cook for about 5 minutes stirring often.  Oatmeal will thicken more after removing from heat so cook until it is almost to you desired consistency.
2.  Place in bowl and top with a sprinkle of cinnamon, cut up banana and almonds.

Now, I must confess.  The almond milk is NOT clean.  Regular, plain almond milk=clean.  Vanilla flavored almond milk=healthy, but not clean.  It has plenty of clean ingredients (almonds, evaporated cane sugar) but it also has some added things that are not clean (phosphates, etc).  If you want this to be a 100% clean meal, use regular skim milk or plain almond milk or just water instead.

Verdict:  it was good.  Not "oh I want to eat this everyday good" but a nice break from my typical egg white omelet or smoothie.

Tip:  If you are rushed for time in the morning you can cook your oatmeal in a crockpot.  Let it cook on low overnight (check your crockpot for recommended times and settings) and it will be piping hot and ready for you in the morning.  I have a friend who does this on Sunday nights and then she keeps the leftovers to heat in the microwave the rest of the week.  Also, if you need just a little more flavor (i.e. sweetener!), you can add a little honey or maple syrup which are both clean foods.

  1. I eat plain oatmeal with reg/unsweetened almond milk every day! Sometimes I add natural applesauce and sometimes I add bananas and maple syrup. I had no idea it was clean eating! Very cool! I do love my bananas and maple syrup - yum!! I make mine in the microwave though - is that still considered clean? I put 1/2 cup oatmeal, 1 cup almond milk in a bowl for 1 min, then 1 min again. ( otherwise it overflows). Looking forward to learning more about clean eating from you!!

  2. Yep...all that is clean! I wish I loved oatmeal. I love oatmeal cookies! :)
