Eat Clean Week: Tuesday Supper


Supper was a challenge tonight.  I was very excited to try this recipe from Clean Eating magazine for Sweet and Sour Chicken.  I had the chicken marinating in the fridge while I was at the gym and after a great workout I couldn't wait to get home and cook it up and eat while watching The Biggest Loser. 

My stupid stove had other ideas.  It's over 30 years old so it's no surprise when something on it breaks.  Tonight one of the knobs completely broke off.  And then the burners decided to stop heating up.  I thought the oven was still going to work but even at 400 degrees it was barely hot.  So supper ended up going in the microwave and now we are going to have to suck it up and buy a new stove.  UGH!  
Anyway...this meal was really good.  I was surprised that Aaron even liked it as he is super picky!.  I have made a similar version with pork and I think this recipe would be great with pork or even on skewers on the grill.

I ate it as recommended, over brown rice.  We have a rice cooker that makes cooking rice so easy.  We got it as a wedding present and it has been one of our most used cooking appliances!  And just for your information--brown rice is clean, white rice is not.  I had a glass of water with a squeeze of lime and a squeeze of lemon in it.  

I'll confess--I also splurged and had some (un-clean) orange sherbet ice cream.  I had done really well with my calorie counts for the day so I decided I could treat myself!

Tomorrow I'm having a cheat meal!  Those of you from Eastern NC will totally understand my splurge tomorrow! :)
